Wine Tasting Notes
Our 2005 Napa Valley Cabernet Sauvignon showcases elegant cherry, blackberry, and clove aromas and flavors with intricate notes of cedar and tobacco box. This medium to full bodied Cabernet Sauvignon possesses integrated tannins which are complemented by the finesse inherent in fruit from our William Hill Estate vineyard.
Viticulture Notes
The winter months throughout early 2005 saw a lot of rain but the weather was fairly dry throughout the month March. Precipitation began again in April and continued into June. Due to the slightly cooler spring weather, bud break came a bit later than previous years. The cooler weather throughout the summer months permitted longer hang time which allowed for the development of intricate aromas and flavors. Autumn eventually brought sunshine and heat which ripened the grapes quickly, allowing harvest to finally begin in mid-September. Though it was a later harvest in 2005, the vines produced ripe, flavorful clusters of exceptional quality.
Winemaker Notes
The Cabernet Sauvignon grapes were hand harvested from October 12th to October 31st. Extractive fermentation methods were implemented to maximize ripe tannins and were followed by extended post-fermentation maceration to enhance the finesse of the young wine lots. Following pressing, malolactic fermentation was completed in tank, after which the wines were racked to primarily French oak (25% new) barrels for maturation. Final evaluation and blending of the individual lots occurred just prior to bottling.
