2022 Cabernet Sauvignon

Tasting Notes: The velvety-smooth palate offers notes of black cherry, baked blackberry and dark plum, accented by hints of black pepper and oak.

Viticulture Notes: The 2022 growing season offered exceptional growing conditions. While mostly even and temperate, some warm stretches in summer accelerated ripening, leading to a fast and early harvest. Overall, quality was high, with warm summer days, cool foggy evenings and ample summer breezes ensuring that fruit ripened to perfection.

Winemaker Notes: Fruit for our 2022 California Cabernet Sauvignon was sourced primarily from the Red Hills Lake County AVA, with Monterey and Sonoma Counties in support. Fruit was destemmed and crushed prior to fermentation in stainless steel tanks at a maximum temperature of 90°F. Following fermentation, this wine underwent malolactic fermentation to soften mouthfeel before oak aging.

Food Pairings: Hard cheeses, rich pastas, rosemary-grilled steak or other hearty meat dishes.
