2021 Napa Valley Cabernet Sauvignon

Tasting Notes: Bold, dark fruit notes of blackberry, plum, black cherry and fig at the forefront of the smooth, deeply layered palate, which are contrasted by spicier, earthier hints of chocolate, leather, cedar, vanilla and clove. Fine tannins add texture and support, helping frame the dense, velvety-smooth finish.

Viticulture Notes: Grapes were selected from our William Hill Estate and Cypress Ranch Vineyards. At each exceptional site, vines are attentively farmed to produce low yields of complex, concentrated fruit. Vintage 2021 marked a welcome return to winter rains, which quenched the soil during dry weather the rest of the season. Over the summer, conditions stayed temperate and mild, giving the grapes the luxury of hanging on the vine. Harvest began early, producing low yields of small berries with intense flavor concentration and optimal ripeness.

Winemaker Notes: After being destemmed and crushed, the grapes underwent up to a three-day cold soak. Daily extractions up to three times per day optimized the expression of color, structure and flavor. The wine aged for 20 months in French oak barrels, 31% new.
